I created a post over at the Petri Knowledgebase on the installation requirements for VMware ESX 3.x (http://www.petri.co.il/virtual_esx_install_requirements.htm) - take a look.

As for the vSphere 4 installation requirements, take a look at the vSphere 4 and ESX product documentation at this URL (http://www.vmware.com/support/pubs/vs_pages/vsp_pubs_esx40_vc40.html).

No matter what version you use, you need to check the VMware Hardware Compatibility Guide (http://www.vmware.com/resources/compatibility/search.php) (formerly the HCL) to make sure your hardware is compatible!
